Apple & Pear Spiced Muffins
Ingredients:
- 400g gluten free oats
- 2 x apples
- 4 x pears
- 3 eggs
- 1 cup melted coconut oil
- 100g coconut
- 3 Tbsp honey
- 1 Tbsp cinnamon
- 1 Tbsp mixed spice
- 1 Tbsp baking powder
Method:
- Blitz oats in a Nutribullet to a flour consistency
- Peel the apples & pears and dice / slice into small pieces
- Mix the dry ingredients and add to a mixing bowl / food processor with the fruit, eggs, honey & coconut oil.
- Mix thoroughly.
- Spoon into muffin cases.
- Bake @ 180dg for 30 mins.
- Enjoy.
