INGREDIENTS:
250g desiccated coconut
75g ground almonds
100g solid coconut oil
100ml honey
100g dark chocolate
METHOD:
Blend all of the ingredients (apart from the chocolate) in a good processor
The mixture should be a creamy texture (you should be able to roll the mixture easily.)
Press the mixture firmly into a parchment lined baking tray.
Put it in the freezer for about half an hour to set.
Remove the coconut from the freezer and slice into whatever shape/size you want the bars to be.
Melt the chocolate, and drizzle over the bars.
Put back in the fridge to set.
Enjoy.
