Winter Spice Granola


Ingredients:

- 300g gluten free oats

- 150g pumpkin seeds / sunflower seeds / chia seeds / chopped nuts

- 2 tbsp cinnamon

- 2 tbsp mixed spice

- 2 tbsp nutmeg

- 1/3 cup honey (80g)

- 1/3 cup coconut oil (80g) - to melt

- 75g raisins / dried fruit

- 1 large pinch of sea salt


Method:

- Combine the oats, seeds / nuts, cinnamon, nutmeg & mixed spice and sea salt in a bowl, and mix

- Add the honey, and the melted coconut oil, and mix well

- Spread on a lined baking tray, and bake for 40 minutes @ 180dg, tossing halfway through.

- Add the raisins / dried fruit.

- Allow to cool.

- Store in an airtight container.

- Enjoy!
